Barbequed Chicken Strips with Chunky Chips and Pear and Bean salad

We managed to have one BBQ last week before the weather turned cold again.  BBQs are so easy and there’s a lot less cleaning up required in the kitchen.  This is one of our most popular BBQ combinations, its quick and easy to do.  The marinade for the chicken is the Golden Marinade recipe from The Failsafe Cookbook, and the Pear and Bean Salad is based on the recipe in Friendly Food.

BBQ Chicken Strips

Serves 4
Prep time 1 hour, 10 minutes
Cook time 15 minutes

A great recipe for BBQ chicken strips.

Ingredients

  • Golden Marinade (refer to basics page)
  • 600g chicken fillet (cut into strips, we prefer chicken tenderloins)

Directions

1. Add the chicken and marinade in a large container and mix to coat well. Store in the fridge for at least an hour before cooking, turning the chicken over at least once.
2. Cook on the BBQ and serve immediately. If Amines can’t be tolerated, be careful not to brown the meat too much.

Pear and Bean Salad

Serves 4-6

Low Chemical Pear and Bean Salad.

Ingredients

  • 1 clove garlic (crushed)
  • 30ml water
  • 1/2 teaspoon sugar
  • 1/4 teaspoon ground sea salt
  • 30ml sunflower oil
  • 3/4 teaspoons citric acid
  • 1 tin bean mix (400g, drained and rinsed)
  • 1/2 stalk celery (finely chopped)
  • 4 pear halves (fresh or tinned, chopped)
  • 1/2 cup mung bean sprouts or finely shredded lettuce
  • 1/2 cup cooked green beans (sliced)
  • 4 spring onion (finely chopped)

Optional

  • 1 tablespoon poppy seeds

Directions

1. Combine the pears, mung beans, lettuce, green beans, shallots, bean mix and celery in a large bowl and gently mix together.
2. To make the dressing, combine the sunflower oil, citric acid, sugar, salt, garlic and water in a small jar. With the lid on, shake well to combine.
3. Pour the dressing over the vegetables and chill before serving.
4. Optional – sprinkle with poppy seeds just before serving.

Chunky Chips

Serves 4
Prep time 30 minutes
Cook time 10 minutes
Total time 40 minutes

Chunky barbecue chips.

Ingredients

  • 4-5 Medium potatoes (peeled)
  • Canola oil spray

Optional

  • Salt

Directions

1. Partially boil the potatoes whole in salted water. Drain and allow to cool slightly.
2. Slice the potatoes thickly and spray both sides with the canola oil.
3. Cook on the BBQ until cooked through, about 10 minutes,turning part way through.
4. Sprinkle with salt (optional) before serving immediately.

    Great recipe, my wife is on an elimination diet to try and combat migranes and is pretty limited to what she can eat at the moment. This recipe ticked all the boxes and when I cooked it for her she said it was the tastiest thing she'd had since starting the diet! Thank you 🙂
