Golden Drumsticks and Apple and Sour Cream Coleslaw

With the weather getting warmer, its time for salads and BBQs.  I got the idea for this coleslaw from Better Homes and Gardens a few weeks ago.  The drumsticks can be cooked in the oven or on the BBQ and be eaten hot or cold.  Cold they are great to take on a picnic, and go well with the coleslaw.

 

Golden Drumsticks

Serves 4
Prep time 1 hour
Cook time 30 minutes
Total time 1 hour, 30 minutes

A low chemical / failsafe chicken drumstick recipe for the oven or BBQ.

Ingredients

  • 8 Chicken drumsticks
  • Golden Marinade (refer to basics page)

Directions

1. Combine the chicken and marinade in a large bowl, cover and place in the fridge for at least an hour.
2. Bake the drumsticks in the oven at 180 C for approximately 30 minutes, turning at least once, and cover in foil if it gets to dark.
3. These can also be cooked on the BBQ.

Note

Low Chemical / Failsafe

Be careful not to  brown the meat if you are avoiding amines.

Apple and Sour Cream Coleslaw

Serves 3
Prep time 10 minutes
Allergy / Intolerance Amines, Artificial Addititives, Artificial Colours, Egg, Glutamates, Preservatives, Salicylates, Wheat
Suitable for Gluten Free, RPAH Elimination Diet - Moderate Chemical, Salicylate Challenge
Meal type Salad, Side Dish

Coleslaw made with apple and sour cream.

Ingredients

  • 1 cup Red Cabbage (finely sliced)
  • 1 cup Green Cabbage (finely chopped)
  • 1 Red or Golden Delicious apple (peeled and grated, excess liquid squeezed out)
  • 3 - 4 heaped tablespoons Light sour cream

Directions

1. Combine the cabbage and apple in a medium sized bowl.
2. Stir through the sour cream and mix until the cabbage and apple are well covered. Add more if required.
3. Store covered in the fridge until ready to serve.

Note

Moderate Salicylates, Low Glutamates, Low Amines

Natural Yogurt can be used instead of sour cream.  If the yogurt is fresh it will below in amines, otherwise yogurt is treated as moderate amines.
