Ingredients

For the cupcakes:

  • 15 Coffee Cupcakes (Refer to recipe)
  • 4 1/2 Batches Maple Butter Cream Icing (Refer to recipe)
  • 23 Chuggington cupcake rings
  • 23 train cupcake wrappers
  • 23 Cup cake pans

To assemble:

  • 1 2-tier cake stand
  • 1 14-inch round cake board
  • 1 wooden Chugginton train
  • 3 Additional Chuggington trains
  • 1/2 cup pure icing sugar
  • Water
  • Chuggington banner (make this on your computer from images available on the internet, print and laminate or cover in clear contact.)
  • Candles
  • Sticky tape to secure the banner

For the train cakes:

  • 1/2 Batch large vanilla cake mixture (Refer to recipe)
  • Hoppers naturally coloured 100s and 1000s and/or sprinkles (100s and 1000s stick the best)
  • 1 Batch plain butter cream icing (Refer to recipe)
  • 1 train cake silicon mold
  • 3 Nestle Smarties

For the top cake:

  • 1 Mini Chocolate Cake with Chocolate Butter Cream Icing (Refer to recipe)

Directions

To decorate the cupcakes:
1. Place a cupcake wrapper around each cup cake.
2. Fill a piping bag with the maple butter cream icing and using a large nozzle pipe a big swirl of icing on top of each cake.

Place a Chugginton cupcake ring on top of each cake.

4. Making the cakes on the day is best, but if you're going to be short of time on the day they are perfectly fine to be made and decorated the day before the party and stored in an airtight container. If it's very hot weather they can go in the fridge and be brought out a couple of hours before serving to come back to room temperature. Alternatively, prepare the cakes and icing the day before. Store the icing in the fridge and decorate on the day.
To make the train cakes:
5. Preheat the oven to 180 C.

Pour the vanilla cake batter into the train cake mold, make them about 3/4 full. I used seven pieces as this was the number that would fit on my cake stand. Use the left over cake batter to make 8 more cup cakes for the bottom layer of the cake.

7. Bake the cakes for approximately 25 minutes. The cakes are cooked when a skewer placed in the middle comes out clean.
8. Allow the cakes to cool slightly before transferring to a wire rack to cool completely.
9. The cakes can be decorated the day before, however they are messy to move once made. If there isn't enough time on the day, make the cakes the day before then decorate them as part of the cake assembly on the day. The cakes can be stored at room temperature in an air tight container. The cupcakes are decorated as per steps 1 to 3.

Before decorating the cakes flatten the bottoms of the train cakes by cutting off the rounded "tops".

11. Place 2 tablespoons of sprinkles or 100s and 1000s onto a small plate. Leave the jar close by with a spoon in it, in case you need more.
12. Spread a layer of plain butter cream icing over the top and sides of the first cake. Roll the cake in the plate of sprinkles to coat, and use your fingers to cover any gaps. Once the cake is covered, place it on the edge of the larger cake stand.
13. Scrape the left over sprinkles onto a second plate and repeat steps 11 and 12 in a different colour for each piece of the train. The last piece can be a multi-coloured one from all the leftover sprinkles.
14. Place two Smarties for headlights on the engine piece, and another one on top of the funnel.

Arrange the engine and carriages around the cake stand.

To assemble:
16. To secure the cake stand and the cake board, mix the pure icing sugar with a little bit of water to make a smooth paste. Use a bit of icing on the bottom of both cake stands to secure them to the cake board and the large stand.
17. Place the mini chocolate cake onto the top stand. Arrange the train cakes around the edge of the middle stand. Arrange the cupcakes around the bottom on the cake board.
18. Place the wooden train on top of the top cake, and arrange the other trains around it. Use a bit of the icing from securing the cake stands to secure the trains in place.
19. Secure the Chuggington banner to the top cake stand using sticky tape.
20. Place the candles on the train cakes.

Note

The Chuggington Cupcakes are Low Chemical / Failsafe and can be be dairy-free if using Nuttelex.

The train cakes are low chemical / Failsafe, as is the plain butter cream icing.  The naturally coloured 100s and 1000s contain salicylates.  The Smarties contain salicylates and amines.

The top cake can be low chemical/Failsafe if made with carob, or very high in amines if made with cocoa

Each train cake can be cut in half for serving, and the mini cake at the top into four pieces.  All up this cake provides 41 serves (23 cup cakes, 14 pieces of train cake and 4 pieces of the top cake).
