Sauces and Chutneys

The sauces on this page can be used as condiments or as a sauce base in other recipes.

No-Tomato Sauce

No-Tomato Sauce  looks like home made tomato sauce, but has no tomatoes, and tastes close to the real thing as well.  I make it with moderate salicylate ingredients (carrots) but these can be left out.  It can be used as a condiment or as a substitute tomato sauce for pasta based dishes.

Pear Sauce and Pear and Vegetable Sauce

Pear Sauce is a substitute for tomato sauce.  We make the pear sauce at the same time as the chutney, and use half of the chutney mixture to make the sauce.  As a variation I add some other vegetables to make Pear and Vegetable Sauce.

Veloute

Veloute is an alternative to white sauce, it is made with stock instead of milk.

Vegetable Sauce

This vegetable sauce can be used as a stir-through sauce with rice or pasta or as a base in pies and casseroles.  It’s packed full of vegetables and makes hiding them easy!
