      A low chemical, easy to make mayonnaise
    
        
    Ingredients
- 1/4 cup Cornflour (wheaten)
- 1 teaspoon Citric Acid (or more to taste)
- 1 teaspoon Salt
- 1/4 cup Sugar (or more to taste)
- 1 1/4 cup Water
- 2 Eggs
- 175ml Sunflower Oil
Directions
| 1. | Combine the cornflour, citric acid, salt, sugar and water in a small saucepan and cook over medium heat. | 
| 2. | When thickened (it looks like glue), pour into a blender and while whizzing add the eggs and drizzle in the oil. | 
| 3. | Keeps in an airtight container for about 2 weeks. |

If salicylates aren't a problem use lemon juice and honey instead of the lemon juice substitute and rice malt syrup.
Pear Salad Dressing

- 1/2 cup Sunflower oil
- 1/2 cup Pear juice (Refer to Basics Page)
- Ground sea salt
Directions
| 1. | Dissolve the citric acid in the hot water. | 
| 2. | Combine the oil, juice, citric acid and salt in a jar. Shake to mix well. | 
| 3. | Store in the fridge for up to 3 days. |

Maple Syrup Vinaigrette

- 1 tablespoon malt vinegar

| 1. | Combine all the ingredients in a jar or container with a lid and shake well. |
