Potatoes another way

This is not my recipe, it has been doing the rounds on Facebook and Pinterest for a while, but I first saw it on Right to Be Alive last year.  Potatoes are a staple on the FAILSAFE / Elimination diet and you can never have enough variations.  Oscar loves these, so I’m sure they be’ll a hit with your family too.

Chipped Potatoes

Prep time 15 minutes
Cook time 45 minutes
Total time 1 hour

Simple baked potatoes that are better than chips!

Ingredients

  • 4 Large potatoes (refer to note)
  • Sea salt
  • Sunflower or Rice Bran oil

Directions

1. Preheat the oven to 180°C, and line a tray with baking paper.
2. Peel the potatoes, if required, otherwise scrub the skins clean.
3. Thinly slice the potatoes almost all the way through for the entire length of the potato.
4. Place the potatoes on the tray and drizzle liberally with oil and sprinkle with sea salt.
5.
Bake in the oven for 45 minutes.
Chip Potatoes (FAILSAFE when peeled)

Note

Low Chemical / FAILSAFE if the potatoes are peeled.  If cooking for multiple people, you can leave the potatoes unpeeled for anyone who isn't on the FAILSAFE / Elimination diet.
