I can’t believe that in the 3 years since we started on the Elimination diet I have never made Lemon Delicious Pudding! Well I finally have, using no lemons of course, and it was just as delicious as I remember it. Yummy cake on top, and gooey, lemony pudding below (a bit too lemony for Oscar). The recipe I modified was one from the Coles Baby And Toddler magazine.

Easy, no-lemon "lemon" delicious pudding.
Ingredients
- 4 tablespoons lemon juice substitute (Refer to Basics page)
- 4 eggs (separated)
- 50g butter (softened)
- 3/4 cups caster sugar
- 4 tablespoons plain white flour (sifted)
- 1 cup milk
- Canola oil spray
- Hot water
