A Picnic

Last weekend we went to see Window in the Willows at the Botanical Gardens, and took a picnic.  So what did we take?  I wanted to try something new as Oscar is typically not very keen on picnic fare, so I made pin wheels, which I know he has made at day care.  Chicken and ricotta ones for Mum and Dad and ham and cheese for Oscar.   They went down a treat with everyone.  As we have an abundance of zucchini’s at the moment, I also made a zucchini dip from a recipe I found on all recipes.

Our Picnic Basket:

  • Zucchini dip (see recipe below)
  • Cheese
  • Biscuits – savoy, rice crackers and pretzels
  • Carrot and Celery sticks
  • Ham and cheese pin wheels (see recipe below)
  • Chicken and ricotta pin wheels (see recipe below)
  • Pear Pops (lolly pops)
  • Preservative free lemonade
  • Cupcakes

 

Cream Cheese, Zucchini and Chive Dip

Prep time 1 hour, 15 minutes

Suitable for RPAH Elimination Diet - Moderate Chemical, Salicylate Challenge

Quick, easy and healthy zucchini dip.

Ingredients

  • 250g Light cream cheese (softened)
  • 3 tablespoons Low fat milk
  • 1 cup Peeled and grated zucchini (squeezed to remove the excess liquid)
  • 3 tablespoons Chives (chopped)
  • Generous pinch Salt (to taste)
  • 2 cloves Garlic (chopped)

Directions

1. Add the milk and cream cheese to a food processor and whiz for a few seconds until well blended.
2. Add the garlic, salt, zucchini and chives and whiz again until well combined.
3. Chill in the fridge for at least an hour before serving.

Chicken and Ricotta Pinwheels

Serves 7
Prep time 30 minutes
Cook time 25 minutes
Total time 55 minutes

Chicken and ricotta pastry pinwheels.

Ingredients

  • 1 sheet butter puff pastry (thawed)
  • 1 cup cooked chicken (diced)
  • 1 swede (cooked and pureed)
  • 1/2 cup smooth light ricotta
  • Milk (for brushing)

Directions

1. Preheat the oven to 180 C. Line a baking tray with baking paper.
2. Combine the chicken, ricotta and swede in a bowl. Spread over the pastry leaving 1cm clear on two opposite sides.
3. Brush the milk over the two clear sides.
4. Roll up the pastry starting on one of the clear sides. Push down firmly on the top edge to seal. Brush the outside of the roll with more milk.
5. Cut the roll with a sharp knife into 7 pieces and place cut side down on the baking tray.
6. Cook for approximately 25 minutes or until the pastry is cooked and golden brown.
7. Allow to cool on the tray for 5 minutes.
8. Can be served hot or cold. Can be frozen for longer storage.

Bacon and Cheese Pinwheels

Serves 7

Cook time 25 minutes
Total time 40 minutes

Ingredients

  • 3 Slices preservative-free bacon (roughly diced)
  • Milk (for brushing)

3. Brush milk over the two clear sides.
